Lollygagging in Lisa's Larder- December

Well I did a horrible job of documenting  things through the month.  We did a lot of entertaining in December and with all the wonderful commotion I forgot to snap pictures. And with the multitude of visitors, there were more cooks in my kitchen than just Patrick and I. So with that in mind  I will attempt to give a pictorial view of  December activities.


Veggie Quiche....
The girls (i.e. chickens) continue to give us a steady supply of eggs. If we still have an abundance after selling them, we usually end up having them for dinner.  This night we made a veggie quiche.  Peppers that were frozen this summer were sauteed along with some onion and sprinkled with cheese.  Yum. Thanks girls. 


Eggnog waffles........


I made some fresh eggnog with some of our eggs.  For years, whenever eggnog becomes available in the grocery store, we purchase some for the sole purpose of eggnog waffles.  They are so good and seem so holidayish. Well, with fresh eggs I decided I could make it and avoid all the chemicals in the carton from the store.  As usual they were delicious, especially with the maple syrup that we still have from Liz.


Dan's chicken noodle soup recipe. .......
One cold day we cooked up a chicken and turned it into Dan's chicken noodle soup. For those of you who do not know, Patrick's brother Dan gave us a self published cookbook one year at Christmas and we fell in love with the soup recipe in it.  It is great on a cold winters night. 

French bread stuffed with BBQ meatballs......
I usually make this as enchilada bread but seeing as I had a batch of leftover BBQ meatballs from a party I decided to use it in this bread.  Sara and Eric joined us for this dinner.

Deer jerky,,,,,,,,,,,



As long as you have a dehydrator it is an easy process.  The person who butchered the deer for us gave us a few packages that were sliced for jerky.  All Patrick did was season it up and toss it on the dehydrator.  It has a great flavor. We plan to vacuum seal some of it up and send some to Travis. 


Canned stew meat.......venison style
Looks yucky but tastes great.  It makes delicious stroganoff.  With my iron levels still low the doctor told me I had to start eating red meat a few times a week in addition to taking iron supplements.  The venison fits the prescription well.

Christmas dinner. .........


Lots and lots of elves helped prepare this meal but I did a very poor job documenting activities from the 24th on thru the end of the year.

Sharee's Viking Cake.............


Sharee loves to bake. Last year she spent many hours making a cake for us that disappointed her.  This year she decided that she would treat us to one she had made before and knew was good.  Sharee, her mother and I spent most of  Christmas eve making this creation. IT IS RICH.  OH SO GOOD. Creme brule, chocolate ganache, dark chocolate, milk chocolate, bittersweet chocolate. Butter, cream, sugar.  More chocolate  and then more butter. We ate on it for days since a sliver is all you could eat. Especially since we had these other desserts.

Cranberry raisin pie............of course.  What is Christmas without it?

We needed a bit more butter and sugar. We also had a pumpkin pie but no picture was taken of it. They all look the same ha ha. Boy I am glad I went for my yearly physical earlier in the month. Now I have all year to work it off.


Prime rib dinner..........
Mom and Dad Salchow arrived on the 26th and brought all the fixin's for a prime rib dinner.  This is the only thing I snapped a picture of.  We had baked potatoes, salad and rolls. We topped it off with chocolate cake and berry pie.

Chicken and Dumplings.......
Sharee wanted to make chicken and dumplings before she returned to Phoenix.  We remembered to take this picture before it was all gone.  As the week progressed and more people arrived I had to pull out the bigger pots and bring chairs down from the attic.  We never did get a big group picture but this house was full of family from all over-----Phoenix, Pine Knoll Shores, Morganton, Winston Salem and Raleigh. A grand time was had by all.

I love you all. If you weren't here with us at some point during the month we sure missed you.  Let us know when you are arriving and I will pull out the extra chairs and bring out the big pots.
